Recipe(s) of the Week: An Ode to the Portabella Sandwich

Sometimes the Recipe of the Week posts just feel like an embarrassment of riches.  I subscribe to roughly 467 food blogs (I say roughly because I can’t help myself, I add at least one per day).  Now part of that is because I started my own food blog before The Mushroom Channel was but a glimmer in anyone’s eye. And life revolved around food long before that.  Imagine children’s books with pages earmarked to when anyone attended a feast at the castle or baked a cake with Gran.

Yeah, that bad.  So I can say very confidently that I could not keep myself off food blogs if I were trying so it’s a pretty incredible thing that it’s my job.  Enough about me, back to ‘bellas.  After basking in the warm grill fires filled with portabella burgers and mushroom sliders then cooling down with chillen murshroom salads and stuffed caps for cookouts, I hadn’t give a lot of thought to what came next.

Fall. The beautiful season we are now entering.  A time when our colors get warmer and the air is crisp and we are genetically programmed to reach for richer flavors and textures. And those 467 food blogs have been churning out the most incredible mushroom dishes since Labor Day.

In honor to recognize the best of the best, I’m focusing on a category that I find wholly transitional between summer and fall: the Portabella Mushroom Sandwich. Behold…three light options from three heavy hitters.
